Well establish a team first - I think you're still looking for people, so yeah.. that probably comes first. Also, when you have a full team, you guys can bounce "team name" ideas around amongst yourself. Who knows, you guys might be a lot more creative than us. Go with whatever makes you guys happy - a team name is probably the smallest part of making your team a success!
Secondly, most teams don't think of acronyms first and then develop their team name's around them. For example, do you think Nachdi Jawani thought of "NJ" and then picked their name? How about "BK" (Bhangra Knights)? There may be some exemptions to this (i.e. PANJ), but I don't feel the vast majority of the circuit looks or even cares what their team's acronym is.
Acronyms are just WE (fans) use because we don't want to use a complete name each time - i.e. I'd much rather say PCBCA than say "Punjabi Cultural Bhangra Club of Abbotsford" everytime I reference them.
Having said that, my personal suggestion is
Central
Valley ki
Shakti (the power/strength of Central Valley). You could even talk with CVS to get some sponsorship and use their name on your shirts
